just makeit bigger and if they want it smaller next time go back to smaller

Either a town with a glass border or a void, i don't mind, so everyone can play with it, or a superflat world with a bedrock ground and border, so everything has to be brought by people.

if in the future we used super flat could we at least have more stone or dirt than the usual 4 blocks?

If we make a super flat, it shouldn't be the normal superflat generator. That generation of the underground terrain is boring as fuck.
Make a normal generation of the world, cut it along the axis with world edit, and fill in any holes.

Easy.

that sounds good. If it's default super flat I'll harvest all the dirt in no time and there'd just be a bedrock floor left
